SYDNEY'S SEA SALT EVERGREEN COOKIES

INGREDIENTS

2½ cups all purpose flour

2½ tbsp Evergreen

1 tsp baking soda

½ tsp baking powder

1 tsp kosher salt

1 cup unsalted butter at room temperature

1 cup granulated sugar

1½ tbsp brown sugar

2 tsp vanilla extract

1 large egg at room temperature

½ cup coarse sugar

STEPS

Steps 1: Heat oven. Preheat the oven to 350°F. Use parchment paper.
Step 2: Combine dry ingredients. Whisk together flour, Evergreen, baking soda, baking powder, and kosher salt. Set aside.
Step 3: Mix wet ingredients. In a separate bowl, cream together butter, granulated sugar, and brown sugar until smooth and fluffy for about 1 to 2 minutes. Add vanilla and egg. Mix until combined.
Step 4: Combine dry and wet ingredients. Slowly add the dry ingredients to the mix and combine until even. Do not over-mix.
Step 5: Prepare cookie dough balls. Place the coarse sugar in a bowl. Form cookie dough balls of approximately 1.7 tbsp (26 g). Gently roll each ball in the sugar bowl until covered with sugar. Place the balls onto the parchment paper. Leave 2 inches between each cookie to allow the dough to spread.
Step 6: Bake. Bake for 8 to 10 minutes. Let the cookies rest for 5 minutes. The cookie will look soft in the middle and the edges will turn slightly golden.
